Este o re\u021beta simpl<span style=\"font-size: 16px;\">\u0103<\/span> \u0219i universal<span style=\"font-size: 16px;\">\u0103<\/span>, pentru \u00eencep\u0103tori <span style=\"font-size: 16px;\">\u00ee<\/span>n special, iar c\u00e2nd da\u021bi de gust, pute\u021bi experimenta \u0219i cu alte re\u021bete mai avansate.<\/p>\n<p><strong>Ingrediente<\/strong><\/p>\n<ul>\n<li>Oase de porc &#8211; 1 kg;<\/li>\n<li>Mu\u0219chiule\u021b de porc &#8211; 1\u00a0bucat\u0103;<\/li>\n<li>Ou\u0103 &#8211; 4 buc\u0103\u021bi;<\/li>\n<li>T\u0103ie<span style=\"font-size: 16px;\">\u021b<\/span>ei chineze\u0219ti &#8211; 300 g, oricare prefera\u021bi \u0219i ave\u021bi la \u00eendem\u00e2n\u0103;<\/li>\n<li>Ceapa verde &#8211; 5 buc\u0103\u021bi;<\/li>\n<li>Praz &#8211; 1\u00a0bucat\u0103;<\/li>\n<li>Ghimbir &#8211; 10 g, o bucat\u0103 c<span style=\"font-size: 16px;\">\u00e2<\/span>t o nuc\u0103;<\/li>\n<li>Ardei gras &#8211; 1 bucat\u0103;<\/li>\n<li>Usturoi (ca\u021bei) &#8211; 5 buc\u0103\u021bi;<\/li>\n<li>Ciuperci &#8211; 2 buc\u0103\u021bi, de preferat <em>shiitake uscate<\/em>, dar pute\u021bi pune \u0219i altele, pe care le ave\u021bi la \u00eendem\u00e2n\u0103;<\/li>\n<li>Sos de soia &#8211; 5 linguri;<\/li>\n<li>Sare &#8211; 1 lingur\u0103;<\/li>\n<\/ul>\n<p><span style=\"color: #000000;\"><b>Pa\u0219i<\/b><\/span><strong>\u00a0de urmat<\/strong><\/p>\n<ol>\n<li><span style=\"color: #000000;\">Prepara\u021bi<\/span>\u00a0<span style=\"color: #000000;\">\u0219i<\/span>\u00a0<span style=\"color: #000000;\">fierbe\u021bi<\/span> supa de carne.<br \/>\nEu prefer s-o fierb chiar cu o zi \u00eenainte, s\u0103 se p\u0103trund\u0103 bine toate aromele \u0219i s\u0103 fiarb\u0103 \u00een voie. Deci, mai \u00eent\u00e2i pune\u021bi oasele de porc \u00eentr-un bol mare, turna\u021bi ap\u0103 rece s\u0103 le acopere bine \u0219i l\u0103sa\u021bi a\u0219a o or\u0103.<\/li>\n<\/ol>\n<p>2. Dup\u0103 acest timp scurge\u021bi apa din bol, aranja\u021bi oasele \u00eentr-o oal\u0103 mare, ad\u0103uga\u021bi iar\u0103\u0219i\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 ap\u0103, c\u00e2t s\u0103 le acopere \u0219i pune\u021bi la fiert. C\u00e2nd \u00eencepe s\u0103 clocoteasc\u0103, face\u021bi focul mic \u0219i\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 l\u0103sa\u021bi s\u0103 fiarb\u0103 \u00eenc\u0103 15 minute.<\/p>\n<p>3. C\u00e2nd au trecut 15 minute, scurge\u021bi atent apa fierbinte din oal\u0103, iar oasele le mai sp\u0103la\u021bi\u00a0 \u00a0 \u00a0 \u00a0bine sub jet de ap\u0103 cald\u0103 la robinet. Cam a\u0219a ajunge\u021bi s\u0103 le ave\u021bi gata pentru a fierbe\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0supa din ele.<\/p>\n<p>4. Acum pune\u021bi din nou oasele \u00een oala curat\u0103, adauga\u021bi peste ele 3 fire de ceapa verde, prazul (bine sp\u0103lat \u0219i t\u0103iat buc\u0103\u021bi mari), 1 ardei \u00eentreg (cur\u0103\u021bat de cotor), ghimbirul proasp\u0103t t\u0103iat felii, c\u0103\u021beii de usturoi \u0219i ciupercile shiitake sau altele (dac\u0103 ave\u021bi).<\/p>\n<p>Turna\u021bi ap\u0103 c\u00e2t s\u0103 le acopere bine pe toate \u0219i pune\u021bi pe foc. C\u00e2nd \u00eencepe s\u0103\u00a0fiarb\u0103, face\u021bi focul mic \u0219i l\u0103sa\u021bi a\u0219a <strong>4 ore<\/strong>.<\/p>\n<p>5. Dup\u0103 aceste 4 ore pune\u021bi \u00een sup\u0103 mu\u0219chiule\u021bul de porc crud \u0219i mai l\u0103sa\u021bi <span style=\"color: #000000;\"><b>\u00eenc\u0103<\/b><\/span><b> 1 or\u0103<\/b> la fiert.\u00a0 La final \u00eenchide\u021bi focul \u0219i l\u0103sa\u021bi supa s\u0103 se mai p\u0103trund\u0103\/r\u0103ceasc\u0103 1-2 ore sau chiar peste noapte.<\/p>\n<p>6.\u00a0 Apoi scoate\u021bi din sup\u0103 mu\u0219chiule\u021bul fiert pe care \u00eel vom t\u0103ia felii \u0219i \u00eel vom folosim la topping-ul final.<\/p>\n<p>7.\u00a0 Restul de oase \u0219i legume le strecura\u021bi printr-o sit\u0103 &#8211; eu folosesc mai \u00eent\u00e2i una mai simpl\u0103 \u0219i mare, apoi alta mai fin\u0103 &#8211; sa fie supa c\u00e2t mai clar\u0103.\u00a0 Oasele \u0219i legumele nu le mai folosesc la nimic, le arunc. Eventual p\u0103strez doar ciupercile pentru topping.<\/p>\n<p>8.\u00a0 Si gata, avem o sup\u0103 consistent\u0103 \u0219i clar\u0103. A r\u0103mas s\u0103 o \u00eenfierb\u00e2nt\u0103m bine pe foc, doar s-o potrivim cu vreo 4-5 linguri sos de soia (dup\u0103 gust) \u0219i eventual sare. Dar dac\u0103 ave\u021bi un sos de soia bun, sarea s-ar putea s\u0103 nu mai trebuiasc\u0103. Recomand s\u0103 adauga\u021bi sosul de soia c\u00e2te pu\u021bin \u0219i s\u0103 gusta\u021bi dup\u0103 fiecare ad\u0103ugire, s\u0103 v\u0103 plac\u0103 combina\u021bia cu supa. Eu am r\u0103mas surprins\u0103 c\u00e2t de bine drege supa \u0219i la gust \u0219i la culoare.<\/p>\n<p>9.\u00a0 Preg\u0103tim topping-urile \u0219i t\u0103ie\u021beii. C\u00e2t supa a\u0219teapt\u0103 fierbinte, preg\u0103tim topping-urile. Mai \u00eent\u00e2i t\u0103ia\u021bi mu\u0219chiule\u021bul fiert felii sub\u021biri \u0219i eventual ciupercile.<\/p>\n<p>10.\u00a0 Pune\u021bi ou\u0103le la fiert \u00een ap\u0103 clocotit\u0103, timp de 6 minute. Apoi le scoate\u021bi \u00een ap\u0103 rece \u0219i l\u0103sa\u021bi 5-10 minute. Am fiert aici 2 ou\u0103 pentru 4 por\u021bii de ramen (folosim jum\u0103tate de ou la 1 por\u021bie) \u0219i a doua zi am fiert \u00eenc\u0103 2 pentru alt\u0103 tur\u0103 de servit.<\/p>\n<p>11. Fierbe\u021bi t\u0103ie\u021beii chineze\u0219ti conform cu instruc\u021biunile de pe pung\u0103.<\/p>\n<p>12. Dup\u0103 ce \u00eei scurge\u021bi de ap\u0103, pute\u021bi optional s\u0103 \u00eei mai drege\u021bi cu 1-2 linguri ulei de susan pr\u0103jit pentru un plus de arom\u0103. Plus ca va \u021bine t\u0103ie\u021beii chineze\u0219ti mai r\u0103sfira\u021bi.<\/p>\n<p>13. T\u0103ia\u021bi m\u0103runt ceapa verde \u0219i eventual ni\u0219te morcov crud fidelu\u021b\u0103 fin\u0103. Chiar mi-a pl\u0103cut cum se simte \u00een sup\u0103.<\/p>\n<p>14.\u00a0 Monta\u021bi supa.\u00a0 \u00centr-un bol ad\u00e2nc pune\u021bi o m\u00e2n\u0103 de t\u0103ie\u021bei, turna\u021bi sup\u0103 fierbinte c\u00e2t s\u0103 \u00eei acopere bine.<\/p>\n<p>15.\u00a0 Orna\u021bi cu c\u00e2teva felii de mu\u0219chiule\u021b, o jum\u0103tate de ou fiert, ceap\u0103 verde \u0219i alte topping-uri dup\u0103 preferin\u021be &#8211; ciuperci feliate, porumb dulce, morcovi, ceapa verde, etc.<\/p>\n<p>Pentru un plus de savoare recomand s\u0103 o stropi\u021bi cu un pic de <a href=\"https:\/\/www.lalena.ro\/reteta\/1624\/Ulei-aromat-chinezesc\/\">ulei aromat\/picant chinezesc &#8211; reteta aici<\/a>. Copiilor nu le-am pus pentru c\u0103 nu suport\u0103 s\u0103 fie ceva chiar \u0219i u\u0219or picant in m\u00e2ncare, dar noi chiar am savurat-o \u00een a\u0219a combina\u021bie.<\/p>\n<p>A fost nea\u0219teptat de bun\u0103 \u0219i cu siguran\u021b\u0103 a devenit una din preferatele noastre.
